A very refreshing soup. I used pineapple juice and fresh, apple juice, orange juice, miso paste, lemon juice , heavy cream, cucumbers and xanthan gum. Salt and pepper. I didn't have the time at that second to write the exact amounts , but it was a great soup. The spicy nuts were toasted with ground spices like cayenne pepper, black pepper and salt. The saffron foam recipe I used was : 1 cup of liquid to 2 sheets of gelatin. When I have the mixture with the gelatin in it, i whipped it in a kitchen aid until stiff peak. It will look like a meringue and the texture is great. Keep it refrigerated.
