Chilled zucchini soup- goat cheese mousse • mint pistou• toastedcashews.

I made up the recipe. It was a last minute thing. I started with a base recipe from Internet and when I tasted it I was not very satisfied. It called for cooked zucchini with chicken stock or vegetable stock , salt and pepper and cream.
I added carrots, ginger, heavy cream, a hint of curry, orange juice and I thicken it with xanthan gum. The goat cheese mousse was made with whipping cream and goat cheese and a bit of gelatin. The mint pesto or pistou in Italian was the same basic pesto with the difference mint was what I used the most .
Great soup.
