Vegetable Terrine •hot•

I think this is a great vegetable terrine and very simple to make.
I used bell peppers, sautéed spinach drained, blanched asparagus cut in pieces, sautéed mushrooms cut in quarters with herbs and shallots , deglazed with wine.
Seasoned with salt and pepper.
I used for 1 cup of liquid ( vegetable stock ) to 8-12 grams of agar.
Mix the liquid and agar in a sauce pan and cook on the stove on a medium heat. When the agar has dissolve in the liquid, pull away from the heat. Mix all the vegetables very good. Add a little of the liquid into the bowl with vegetables. The idea is to add enough liquid to hold all the vegetables in place. You can place the ready mixture in a terrine mold or in a compact mold to obtain a log looking shape. Your choice. Chill mixture . When cool all the way, slice gently , place on 1/2 sheet pans already sprayed with food spray an reheat vegetable terrine for 4 ti 6 minutes.
