This soup was one of my favorites i made for the summer. I got the recipe online and i made a few changes.
Ingredients:
Yield : 3 G
12 # carrots, peeled and cut in small pieces
8 oz butter
3 cups of sugar
3 qts orange juice
1 qt heavy cream
3 tsp garlic powder
4 tsp ginger, powder
2 tsp cayenne pepper
Procedure:
In a sauce pot, add the carrots, butter, sugar, orange juice, heavy cream and cook until the carrots are soft.
Puree mixture until smooth. Add the garlic, ginger, cayenne pepper and heavy cream and whisk until fully incorporated. chill soup.
Cucumber -pistachio relish:
2 ea cucumbers, peeled, seeded and cut small diced
1 cup of pistachios, shelled, corse ground
2 tsp powder ginger
1 tsp fresh mint, chiffonade ( thing strips)
2 tbsp cilantro, chopped
5 tsp mirin
2 tsp granulated sugar
Combine all the ingredients. refrigerate.
