Blue & Orange Mashmallows

I have learned my lesson. Today I wanted to pipe the marshmallows so I did not let the mixture cool like i was suposed to, worry that i was not going to have enough time to pipe them and the mixture was going to set too fast. The problem was, at the end, the marshmallows did not set and they end up being too wet and impossible to lift from the sheet pan. As of now I have them setting a bit longer to see if they will set all the way. Another step i did differently was, that instead of unflavored gelatin , i used jell-O .... The flavor was not what i expected neither. It does not mean i will not try again the flavored gelatin again, but for now i rather use extracts for the flavor profile.

I made a second batch per recipe. I separated the mixture and i added blue coloring on one batch and orange extract and orange coloring in another. They came out great and i was able to pipe them. I had to pipe a little faster than I thought because the mixture was setting quickly. I am happy for the results.
