The eggs were baked. Make charro beans or buy it at the store and place about 2 ounces of the beans at the bottom of the ramekin ( the ramekin fits about 6 oz ). Crack one egg and bake in the oven at 350F until the whites are cook and the yolk is still soft, about 4 to 5 minutes.
Garnish with garlic paprika brioche croutons ( the croutons were tossed in olive oil, paprika and garlic powder. They were baked for 7 minutes in a 350F). Any bread would work.
Sprinkle with shredded cheddar cheese. Put back in the oven until the cheese melts. Finish with lime cream ( sour cream with lime zest and juice to taste)
