Pumpkin Butter

Yes! pumpkin madness 

This pumpkin butter is great. I got this recipe from a website.
 I added ginger and cloves and turned out even better. 



THE STUFF YOU NEED
5 cups fresh pumpkin puree 
( sweet pumpkin-peel and cut into wedges, take the seeds out, roast with a small amount of olive oil or vegetable oil for 25 minutes in a 350F oven. Let it stand since it will be too hot to handle.)
1/4 cup apple juice - and a little more for later
1 cup light brown sugar
3 Tablespoon maple syrup
4 tsp ground ginger
2 tsp ground cloves
1 Tablespoon ground cinnamon
1/2 tsp ground nutmeg
1 tsp fresh lemon juice 
1 tsp vanilla extract 
a pinch of salt


THE COOKING
Add all the ingredients into a deep sauce pan. Mix well and bring to a simmer for 10 to 12 minutes while stirring constantly to prevent from burning.
Transfer mixture into a food processor or blender. Blend until smooth. if the mixture is too thick, add a small amount of apple juice. 
 Chill and transfer into a air tight container and keep refrigerated up to 3 weeks. 
* Lemon juice was used as a preservative and also to enhance flavor.
