Scotch eggs

I decided to make scotch egg for brunch. Very simple. I made soft boiled eggs, about 8 minutes in the steamer and peeled right away. 
I took breakfast sausage broke it into pieces and added parsley and few eggs. Mixed all together and started covering the eggs with the sausage mixture. I made enough mix for 40 eggs. I am sure you don't need that much mix . 

I put the eggs in the freezer for 10 minutes to make it easier to bread. My breeding station consisted of: flour, egg wash and a mix of breadcrumbs and corn flakes. 
I fried the eggs until golden brown, let it rest and I sliced them. 
I garnished the eggs with a ricotta maple cream. It is like having an entire breakfast in one bite.
